Maple Timbale with apple, blueberry, and cherry fillings

¾ cup chopped peanuts    1 ¼ cup all purpose flour

2 sticks margarine     ½ cup peanut flour

1 cup sugar      1 ½ teaspoon baking powder

¼ cup brown sugar     1 cup milk

½ cup maple syrup     3 eggs

1 teaspoon cinnamon    Favorite pie filling

¼ teaspoon salt

  1. Combine margarine and sugars in mixing bowl.
  2. Beat at medium speed until smooth and pale.
  3. Add eggs, milk, and maple syrup and beat until smooth.
  4. Mix cinnamon, salt, peanut flour, all purpose flour and baking powder in a bowl.
  5. Alternately, add flour mixture and milk in 1/3 increments to eggs and mix until smooth.
  6. Stir in chopped peanuts
  7. Preheat oven to 350 degrees
  8. Divide dough into pregreased muffin top tray
  9. Bake until muffins are golded colored and firm (15 min)
  10. Top with favorite pie filling.  Makes 30
